Who has better Mexican food, Texas or California?

California's probably going to be much more diverse and include more seafood, I would think.

In terms of quality and diversity, I’d guess they are similar. I’d guess Texas has more Northern Mexico influences while CA has more Central and Southern Mexico influences relative to Texas. Mexican food varies quite a bit regionally.

Depends. Carne asada in SoCal is unbeatable as well as fish tacos.

We have so many Mexicans here, good Mexican food is extremely easy to find if you are only willing to go into the tiendas and other places that the Mexicans themselves go to. There are more upscale places too.
New Mexico does some interesting things with the Hatch chilies and Christmas style, but I didn't find it to be that creative otherwise.

May be an unpopular take, but I recently took a road trip from Santa Barbara to San Diego with lots of food stops, and was overall underwhelmed with most meals. Yeah, everything is very fresh and organic, but actual seasoning still lacked compared to the gulf coast.

I was talking about true Mexican food. New Mexico is basically Tex-Mex with Hatch chilis, Christmas style.

Agreed. We were in south Cali a few years ago and nothing we had stood out. Best thing I ate was tri- tip nachos
