That's awesome. Not your traditional jam, but something new and different. I'd 100% give that a try. would make a nice social evening for the family or group of friends.

We do a Cajun fried rice in a wok, but we add egg and corn too.

Not jambalaya but I would eat it.

Assuming his "cajun seasoning" is something Tony's why do you still add more onion and garlic powder and salt/pepper. That has to be so over seasoned.

it probably is but without chicken stock, that rice is going to be pretty bland. It would be pretty hard to over season

Agree with others that it's more of a stir fry or riced rice dish, but it don't look too bad. I'd eat it.
