PSA - had the red bean and pork chop plate lunch at Bergeron's on Monday. I highly recommend.

I guess I'm an outlier but I've tried them all and I prefer pinto beans with sausage over rice. They seem to cream better than red and taste better than white.

For some reason, I like red beans year round and white beans in the cooler season. No particular reason why.

White beans all day. My dad makes white beans and shrimp, which os fantastic. White beans and rabbit from New Orleans Food and Spirits on Thursdays is great.

I like both red and white but on white I prefer the smaller navy pea been and I put just a pinch of cinnamon in them at the end or chopped fine Rosemary which I really like. Would like to try the beans and rabbit.
But I do make Lima beans and shrimp and man that is good.
And cornbread with all of them.

Onion Salad, basically diced onion with olive oil and vinegar added to the top of any bean dish. So good...
Edit because wife was nagging before.
For every half onion finely diced, add about 1 tablespoon olive oil and the same red wine or white vinegar, a little salt, pepper, and a few dashes hot sauce. Serve a spoon or so over beans and taste before you add your hot sauce.
I've posted this before. It's something ma mere always did and I thought it was a thing but I've come to know it isn't. I've showed it to quite a few friends since and everyone who's had it and loves onions won't ever eat beans without it again.
