Brisket steaks

My IG algorithm showed me some guy who made steaks out of the brisket flat and I think i'm gonna try it. He cut the flat into steaks that look somewhat like NY strips and then sous vide them for 72 hours at 130 degrees to get everything to break down. He then patted them dry and seared them. They looked pretty damn good.

Is it possible that any of these could apply here?
I had it under the porch while it recovered from the chopping so maybe it needs/needed sun.

Do I like them? No. I do not like crunchy, mildly sweet, vegetal guavas that eat like bland apples and I'm certainly not interested in dusting them with a salt/chili mix. Some people are going to absolutely love these. They are very refreshing. But they are nothing like the guavas I know and love and I am selling this tree ASAP. I am 100% confident that I will have multiple Vietnamese buyers interested.

I have no idea. I have a Sharp drawer microwave.
If the pops slow down to less than 1 per 3 seconds, stop the microwave
