Yeah the Merlot one is my wife’s all time favorite. I’ve definitely never seen a bourbon one.

Is the gouda aged enough to have crystals?

I'm with you on those "crystals" had an aged parmesan with that shite in it and that's all I want now.

I like the aged cheddar. My favorites are Face Rock 3 year and Tillamook 4 year extra sharp aged white cheddar. I don't know how far the distro on the Tillamook specialty cheese is, but it's very good.

If you like sharp/aged cheddar, try the Coastal cheddar sold at Costco. A good crumbly English cheddar.

My board these days would have a number of the following.
St. Andre tripple cream,
Port Salut, Humbolt fog, Buttermilk blue, true Holland smoked gouda, 2 year white Vermont cheddar and a good o'l Dill Havarti.
