me? 2 things;

- oyster dressing
- 4 layer delight

we're doing more of a potluck type dinner this time; last year was way over the top and no way we're going all out like that again. just come-as-you-are for family & friends.

-Small Sweet Cannoli Treats

Then I'm making the Jambalaya for 60 for the tailgate party we're attending in Norman on Saturday. My daughter graduated from OU, so either way it goes is a win for me, but we're participating in a tailgate for OU alums, so just giving them a taste of what to expect when they come to Baton Rouge.

Shout out to Rat for the Jambalaya calculator! Saves me the guesswork.

Homemade dinner rolls

Haven't settled on a dessert yet.

This is a huge change from my prior T-Day menu when I would have 20-25 people show up. I would start cooking stuff on Tuesday to be ready for T-Day and the menu included:

Chicken/andouille/okra gumbo with rice
Baked Mac & Cheese
Giblet gravy
Cornbread dressing
Sweet potato casserole with pecans and marshmallows
Fried Turkey-----3
Mashed Potatoes
Several pies----pecan, apple, pumpkin
Homemade herb/cheese loaves of bread
Assorted sodas, wine, cocktails-----Bloody Mary's flowed freely

I'd do all the cooking for the party and by Thursday night I was pretty spent after the long day and final clean-up.


This year is going to be a snap.

The wife loves Thanksgiving cooking, so I have been relegated to desserts only. The usual sweet potatoes in a small crock pot and this blueberry cheesecake like thing that I like about as much as any desert ever.

roasted pumpkin and delicata squash
mustard and turnip greens with turnips and smoked necks

Cream Cheese 1.5 bricks
Sweetened condensed milk 2/3 can
Blueberries - up to you. This was just over one cup
Pie crust - I actually used puff pastry for this one and it was great
2 eggs
Vanilla extract - 1 teaspoon
Cinnamon - pinch
Orange zest to your liking

The recipe I followed had you mix the blueberries in honey, but I skipped that.
I rolled the pastry as flat as I could get it. Placed in the buttered dish. Mix the other ingredient well and pour over the pastry. Bake at 340* for 40 minutes. Turn off oven and crack door for another 15 or so but watch it to make sure it's not getting too firm. Let cool then chill.

Chicken and sausage gumbo. Smoked a few turkeys last week for work. I boiled the carcasses to make the broth for Thanksgiving gumbo.

Ham - Going to throw it on the smoked. Cut half off the bone and then glaze half that portion. Leave the unsweet side on the bone. Throw that in a corn soup over the weekend.

Deer backstrap - Marinate overnight. Coat with salt and pepper. Going to smoke it to 120 internal and then sear in lard/butter.

Scalloped Sweet Potatoes and Fruit



1 Tbs butter or margarine
3 tart apples, cut into 1/2" pieces
2 Tbs packed light brown sugar
2 lbs sweet potatoes, cut into 3/4" pieces
1/2 cup dried sweet cherries or golden raisins
1 1/2 Tbs unbleached or all-purpose flour
1/4 tsp ground cinnamon
1 cup fat-free reduced-sodium chicken broth
1/4 cup finely chopped pecans

Preheat the oven to 350°F. Coat a 13" x 9" baking dish with nonstick spray.

Melt the butter or margarine in a medium nonstick skillet over medium heat. Add the apples. Cook, stirring, for 1 to 2 minutes, or until they release some of their juices. Add the brown sugar. Cook for 2 minutes, or until the apples are partially softened.

Place the apples, sweet potatoes, and cherries or raisins in the prepared baking dish.

Place the flour and cinnamon in a small bowl. Gradually whisk in 1/4 cup of the broth until the flour dissolves. Whisk in the remaining 3/4 cup broth. Pour into the baking dish. Cover loosely with foil.

Bake for 1 hour, or until the potatoes are tender when pierced with a fork. Remove the foil and sprinkle with the pecans. Bake, uncovered, for 10 to 12 minutes, or until the pecans are toasted and all the broth is evaporated.

Was asked to make rice dressing and bringing some BlueRabbit sourdough bread for Thursday.

On Saturday, making my smoked duck, rabbit, quail and andouille gumbo for my side of the family.

I’m making sweet potato casserole and by special request, spinach Madeline. I might also make delicious regular potato casserole, but I think we will have enough food with what others are bringing.

2 fried turkeys (will fry a bone in turkey breast Friday for sammich's and stuff)
cornbread dressing with andouille and sage pork breakfast sausage
candied yams with pecans
Bloody Mary's to start the day cooking, proceed to an assortment of cabs, zins and merlot

others will chip in with vegs, whipped taters w/gravy, , homemade bread

pecan pie and cherry pie, someone will a bring a surprise desert into the mix
