Our church always does a turkey lunch after service the Sunday before Thanksgiving. Don’t want turkey twice in a week which is fine. Frees us up to do non traditional Thanksgiving day.

Miso something marinated smoked salmon bowls with sushi rice, crispy brussels, pickled veg, fresh jalapenos, sriracha/kewpie mayo topped. Maybe more if the wife has something up her sleeve.

We make chicken stock out of the smoked chicken bones and skins when we smoke chickens. You take that stock and refrigerate it and skim the fat off the next day. Use that fat to make your roux for the gravy. I’ll have to ask my wife about how much and when to add the prosecco in the process.
