I'll start...
add a teaspoon of lard and 2 tablespoons finely chopped or minced onion

Yep, always have some cans of Popeye Spinach in the pantry to throw some apple cider vinegar on. Ate it like crazy as a kid and still do today.
Garbanzo beans, because with a few ingredients I can have homemade better than store bought hummus in 10 minutes. That's kind of cheating though.
As mentioned also, artichoke hearts. Make a real simple but flavorful dinner that is just cubed chicken meat coated in Italian bread crumbs and browned on the stove. Toss in a casserole dish with a few cans of artichokes. Mix up a sauce of oil and good balsamic vinegar and cook in the oven. Optional is grating some cheese and putting back in the oven briefly on broil once done

I can’t narrow it down to only one, but most of the Margaret Holmes brand vegetables are solid.
