What's the story on this guy? Is/was he part of the swamp pop scene in the 70's/80's? I don't remember anything about him when I lived in La.

Anyone use tallow when smoking brisket?

I'll be smoking a 16 lb brisket later this evening for dinner tomorrow. I made tallow with the trimmings from prepping. Was thinking of using some during the cook. When do you use it? Spritzing? Wrapping? How'd it come out?
