What's your egg white separating technique?

Egg shell to egg shell, strain through your fingers, other? I've been using the shell to shell method since I was young, but on some cooking shows I see they seem to use the finger strain method more often than not.

I use shell to shell but the water bottle trick is pretty awesome.

If I just have one or two to do I do it shell to shell, if I am doing more I just use a slotted spoon.

My grandmother taught me shell to shell as a child and I’m still using that method.

At the end of the day, you should wash your hands whether you use your whole hand or do the shell to shell method. No way those eggs don’t touch your fingers, at least.
I just feel I have control if it goes in my hands and between my fingers. I’m more likely to drop the egg trying to keep it in the egg shells.

I teach my students to pool the eggs and separate the yolks by hand. This is mainly due to the fact that we are doing large quantities(±12) and this method is the quickest and most efficient way to separate eggs.

Through the fingers. Faster. No sharp edges to break yolk on.

now a days I just use 2 yolks in pint jar to make mayo the whites go in a lil bowl for chaffles tomorrow morning
