Eleven Madison Park for my 31st birthday (drinking Cognac in the kitchen with chef and Somm after the restaurant closed) followed closely by Osteria Francescana (met Massimo as well). We hit both the year before they won best restaurant in the world...so the year they were judged upon.
When it comes down to it though, if I could choose my last meal...it would be a Central Grocery Muffaletta with a cold Barqs longneck with my family.

Guy Savoy in Paris.
Started with Champagne and foie gras on toast rounds.
Various appetizers, including salmon cooked on hot ice.
Incredibly delicious artichoke and black truffle soup with brioche and truffle butter to dip in it.
Main course was a veal roast for two.
All washed down with Champagne and a delicious French Burgundy (Gevrey-Chambertain)
Then a bombardment of decadent desserts.
I have been to Guy Savoy three times. I had two of the best meals of my life there. #1 and 2.

King crab cakes to start then a cowboy ribeye with loaded hash browns and a Caesar salad. Plenty of mint earl Grey tea toddies to keep things lubricated.

Golden Tiger in Austin at 1am after a day of walking, drinking, and seeing a concert. Best burger I've ever had in my life and the Old Fashioneds at the bar were great as well

Steak and lobster at Hamilton's in PCB in the 90's. Cooked on a open fire right in front of us.

Your lobster story reminded me of one of my most memorable meals. My Cajun in/laws and I went to Nova Scotia in the early 90s for a couple of weeks. While in Peggy’s Cove, we went to a place known for lobsters.
We ordered 2 five pounders for 4 people. They came to the table split in half.
When we finished, the waitress said something like, “I’ve never seen anyone pick the shells over like you all.”
My mother-in-law said, “ma’am, we’re from Louisiana” like that was supposed to explain it... which it probably did.
A lobster that size has good meat in the legs, chest etc... it was delicious.
We still laugh about that.

Came here to say this. IDK why but food cooked on an open fire after you've been in the woods for a couple days is the best. Last year we were living on beanie weanies and ramen for two days before we shot 3 or 4 piglets. Roasted them whole and my god that was heaven.

I have a couple, we’ve done the chef’s table at Commanders a couple of times and it was mind blowing, but also had an incredible tasting menu at Stella before Boswell closed it. I can’t remember everything we ate, but I do remember a duck confit dish that was the best I have ever eaten.

My FIL is from Malaysia, so my wife and I went to visit some of her relatives in Kuala Lumpur. Having homemade Nasi Lemak and Mie Goreng will never taste the same outside of that dining room.

Been to several Michelin starred restaurants in France that are up there, but my most memorable was a little place on a beach on the Amalfi Coast, only accessible by boat, where we went back into the kitchen and selected the fresh seafood we wanted (lobster, shrimp, various fish, squid) and they just brought them out to us in whatever cooking method suited them.

Too many to remember I’m fortunate to say. But recently had the Stuffed bell pepper at La. Lagniappe that was as good as anything I can recall.

About 8:30 we meet up in a canal and FIL asks if we are ready for breakfast.
He moves to the front deck and whips out a single burner that fits on top of a propane bottle and fries bacon and eggs and dishes them out with some fresh bread. I sure miss that old man.

most memorable and probably best is always going to be a dinner in Venice.
It was our last night and we befriended these firefighters that were guarding an Opera house (who nother fun story) anyway, we told them we were kinda being shut out of a lot of local places and they said to follow them.... 10 minutes down winding side alleys and we were at a tiny little restaurant with maybe 3 tables overlooking a quiet portion of canal. The fireman said a few things to the chef and from then on all was taken care off... had some excellent small bites that eventually culminated in from fresh made seafood ravioli for me and a pasta carbonara for my then gf (one day later she would be my fiancé). Night culminated in a some nice glasses of limoncello....whole thing start to finish was perfection.... everything complimented everything else.
Me and my wife will probably be talking about that dinner for the rest of our lives

This is a ham hock that has been slow roasted, but the skin was crisp? The potato was riced, filled with sweetbreads and cooked in a broth. Cabbage (Kraut) salat. It looked like this.

Pedigree-wise, I'd have to say Le Bernadin.
But overall meal, I'd say the place we ate at in Venice, Italy one night. We were staying on the isle of Lido while in Venice and we went walking further into the heart of the island, away from the touristy area and stumbled into this little restaurant. No one in the restaurant spoke English and we spoke no Italian. Menu interpretation and ordering was all done via Google translate. The meal was phenomenal and some of the best seafood I have ever eaten. That was over 10 years ago and the wife and I still talk about that meal often.
