I typically add whatever ingredient provides extra to whatever dish I'm preparing. If indian or asian, I add much more Sambal paste, if mexican, I add whatever spicy salsa is available, etc.

Garlic and shallots, Ill add shallots in the place of onions a lot.

I'll add green onions and leeks. I will add green onions even when not in a recipe if they fit. I love them.

I read a poll recently that asked professional chefs what one thing a home cook could do to improve their meals, and salting was the #1 answer. Restaurant food is seasoned exponentially more than home food because they salt and taste every step of the way. A home cook usually salts/peppers the food one single time.

I've never eaten anything and said, "that has too much onion, garlic or cheese". Never. Imo, you can never have too much of any of those. Except maybe, under-cooked garlic

I always go heavy on the veg (onion, celery, okra, tomato, etc.) and fresh herbs ( basil, green onions, etc) in a recipe, and often dial back the amount of meat called for.

salt is the correct answer
underseasoned usually means under salted

another I use generously is cavenders Greek seasoning
there's nothing savory it won't help out
