What hot sauce do you use in cooking?

I splash Florida hot sauce on the olive oil before cooking m

Also what number heat do you use

My own out of habanero and ghost peppers this year. Last year I made it out of habanero and Trinidad Scorpion Butch T peppers.

A little goes a long way with the heat of those peppers.

Tabasco gets a lot of crap on this board, but it mixes into many foods very well

Who uses just one? I've got Tabasco for heat & acid, Crystal for a more mellow heat, Louisiana for shaking on a shrimp poboy, some Cholula for certain things, and probably three or four more in the kitchen.

Tobasco in bloody mary's and brunswick stew and boiled seafood.

Crystals in everything else.

Sriracha in stir fry, chilli, or fried rice.

my own homemade jalapeno sauce in tacos.

I don't use hot sauce very often as I prefer to season my food rather than add a condiment. But when I do, its Tapatio.

Lately I have used Valentia Extra Hot.
Great flavor and cheap.

I used to use Louisiana hot sauce, but have switched to Tobasco, it seems to be about the lowest on sodium. I keep thinking about trying to make my own, but haven't gotten around to it.
