What are some kitchen skills you don’t have but wish you did?

I can’t quarter a chicken properly to save my life. I’ve watched videos, it doesn’t look that difficult, but every time I go to quarter a bird it’s a massive failure.
I also did not grow up fishing, so cleaning a fish is just something that isn’t in my wheelhouse.

I wish I could skin and debone a fresh water trout the way they do it in northern states. They dont filet it and get a lot more meat

Yeah cleaning fish. Despite practice and seeing my dad do it 700000 times I suck at it. I can clean a deer or a pig like a master, but I wreck some fish.

Cooking sugar/caramel has been the most difficult thing for me personally. I always plan extra time for mistakes.

I can fry pretty good chicken, but I wish I could fry chicken as good as Popeyes or what you get at a really good southern buffet for lunch in a small town. I just don’t even try anymore cause it’s just as cheap to go to Popeyes and I don’t dirty up my whole damn kitchen.

If I can get 16, 17, and 18 year old teens to properly quarter, 6-piece, and 8-piece a whole chicken, I guarantee that after 10 or so birds, you'd be an expert!
Two skills that I believe to be the most difficult to master in cooking are patience and restraint. The ability to leave stuff alone and allow it to cook or knowing when to stop adding ingredients or elements to a dish. I find that the more I cook, the less involved my food becomes. There has been a lot of addition by subtraction over the years.

Baking and making sweets.
The only things in my wheelhouse are a basic cobbler and pecan pralines.

definitely chopping. im not good at cutting consistent sizes and it always takes me too long

And most of the time this is due to not having a sharp enough knife to actually slice through things easily.
Practice your knife sharpening skills and your cutting skills will get better.

That comes with time and learning what goes together well, and what doesn't. I've been cooking for well over 50 years and never use a written recipe now except when baking some things since exact ingredients are important in that area.
When I first started getting into cooking, I'd use a basic recipe. Most times I felt the end result could use something more to make it better and I'd add that. More times than not, it did make it better and the times it didn't, I'd just not use it any more. You tweak the recipe until it totally pleases you and commit it to memory from there-------or at least write it down if you can't remember things and suffer from CRS.

I agree with all that gumbo... plus focusing on techniques rather than recipes. Get the technique down, then mix and match.
