Spinach salad with bacon crumbles, sliced red onion, toasted walnuts, hard boiled egg and blue cheese.

Topped with mid-rare steak and a homemade balsamic dressing.

Vodka waters and probably some spiked eggnog for dessert.

That’s a nice looking grilled cheese.

I made a homemade light oyster stew. And I ate at 5:30.

I liked mine but it needed more cream. I don’t like artichokes in mine. My mother made it all her life and we would destroy it. She used a lot of butter, milk and cream and for some strange reason always put a small dollop of ketchup in her bowl. Did the same with white beans. Never seen anyone else do that.

Closest I can get to hers is Casamentos. It’s that old timey milk oyster stew and it’s as good as anything else in there.

Best I’ve Made

Gris Gris posted it the other day. I had a dozen oysters and a pint of cream...it was rich...and fantastic.

Grilled some Firecracker Salmon, griddled baby potatoes and made Chinese Buffet style green beans.

I always enjoy using the custom Grill Grates spatula gifted to me by a group of great people.

Time to eat!

While cooking I had a cold beer and toasted my brother-in-law and had a shot of tequila for my sister-in-law who we had funerals for this past Saturday. They died 16 days apart. One from organ failure and the other from complications after surgery.

May they both rest in peace!!!

Often the best meals are the simplest. Tonight was one of those nights.

Smoked chicken
Baked sweet potato

Yesterday I was traveling along I-20 and stopped in the middle of nowhere for gas. It was at the Arcadia exit. I went into the general store there called the Gap Farms Travel Center.

There were 10 or so tables in a little restaurant area. Of the 15-20 people in there, I was probably the only one with no camouflage clothing. There were quite a few healthy sized good old boys waiting for their food, which I took to be a good sign.

In the display case of the restaurant area called Smokin’ Barrel BBQ (?) were several take out items wrapped in cellophane. I got a brisket sandwich and also a smoked half chicken and headed out.

I ate the sandwich last night. Tasty and very filling. Tonight my wife and I split the chicken with the sweet potato on the side. It was awesome.

I’ve read on here before that “gas station food” in Louisiana is better than many states’ restaurant food. I would agree.

Chopped up half a link of green onion sausage and a handful of lions mane and oyster mushrooms. Sautéed in some butter and added a few eggs. Made a delicious scramble. Ate with a side of kimchi.
