Smoked pork chops, fried eggs (scrambled for lil Dawg),cream cheese grits, whole grain toast with orange marmalade. Got a cheesecake for dessert. I may eat the whole thing.

Crawfish etouffee over fake noodles, brussels sprouts. I really hate messy plating, but I just couldn't make it pretty.



The etouffee was made with crawfish puree, in addition to one pound of Louisiana crawfish tails. I'm undecided on how to review the puree. It definitely adds plenty of crawfish flavor to the dish. I added it after I sauteed all of the trinity in butter. I didn't add any flour at any time to make a blonde roux, but maybe I should've. Just nothing there to thicken things up. Flavorwise - excellent. I'll wait to see what my husband says, his is over actual rice.
