Tell me what you do with boudin...

I usually like to dip mine in some Cajun mustard and a little Crystal. What do y'all like?

I remove the casing and mash it down flat into a patty, then pan fry it with butter or bacon grease. Usually 1/2 links at a time. Eat it with eggs for breakfast.
Stuff peppers with it.
Or coat the outside with vegetable oil and bake it until crispy. Let it cool a bit then slice and eat with mustard and or bbq sauce.

Eat it as is.
Most I may do with it is when cold, peel the casing off and cook down in a pot to eat as rice dressing, or make a sandwich with some Evangeline Maid bread. Must be Evangeline Maid, because all other bread is inferior.

as is with crystal usually but I had some boudin egg rolls at the Hammond farmers market Saturday that were fantastic. I grabbed some smoked boudin from Ronnies earlier and some egg roll wrappers and am going to try it out later this week
I may put some drained sauerkraut or some pickled okra in with the stuffing and see how that comes out

Just got it for the first time on Friday (I had a Billy's connection and never needed to get boudin in BR before), and holy moly. I got the smoked. I used it along with pepper jack cheese to stuff a cornish hen, and it was awesome.

I like to grill it.
I heat it up in the microwave.
I eat it on a sandwhich.

I like to sauté it a bit then wreck some eggs in it and soft scramble.
But the best way is how I had it this morning. Sitting on the tailgate of my truck at 7:00 am eating boudin, hogs head cheese and a sleeve of Premium saltines with a thermos of Community dark roast under a pecan tree watching a very large bonfire of trees and stumps I lit on the edge of a bean field. I sighted in my 17.
