Me too...I stick mine in the oven at 350 for 50 minutes to get a nice crispness on the skin. Can't go wrong with white bread & mustard.

I do like to make stuffed bellpeppers with it. Something about the flavor of that green pepper that soaks into it.
Last time I used Ronnie's and I chopped up some cracklin and mixed in. Man that is good.

Grill it to get kind of a crispy skin, slice it into medallions, just eat it like that. Every couple of years I'll wrap the links in bacon before grilling it.

Usually eat it as is. Sometimes I smoke it if it hasn't been smoked already. Occasionally I'll dip it in creole mustard

I like it cold. I like it heated up to crisp up the skin. I like it hot from the store.
I love it fried in a skillet and topped with a couple eggs fried over-easy.

Place a hot piece of texas toast in a bowl
Top with cheese
Top with uncased, hot boudin (preferably smoked)
Top with a poached egg
Top with a large ladle (or two) of chicken and sausage gumbo
Enjoy
Or I just eat it regular.
