Suggestions for items to cook/sell for an outdoor festival

What are some things to cook that are not super labor intensive but still provide good options to eat while you walk. (Festival is mid November)

What equipment do you have? Jambalaya pots, bbq pit, fryers? Are you trying to make a profit?

We have just about any catering equipment you can think of at our disposal, and yes, we are looking to maximize profit while still providing a desirable product.

Something that can easily be eaten while walking.

Something in a bowl- jamabalaya or some sort of shrimp pasta is always good

Jambalaya, pastalaya, gumbo will always be the easiest and cheapest.

You can go different with stews (shrimp stew, pork stew, sauce piquante). Crawfish Monica is a hit, depending on crawfish cost. You can make a past with a cream sauce and grilled chicken breast.

Turkey legs are always expensive and have to be sold at a high price. Fish is expensive right now. Footlong corndogs are excellent but almost impossible to get frozen footlongs right now.

Boudin eggrolls would be awesome if you have the help to prep them. As would seafood stuffed pistolettes.

Good quality nachos or tacos could be good, but maybe not a huge seller.

pulled pork nachos.
smoke the butts, shred, scoop and put on top of nachos.
let customer put their own toppings that are in squirt bottles or with tongs on table.

boundin on pit
sausage on a stick
gumbo isnt hard to make a huge batch and serve
chili pies in a small corn chip bag

Gumbo if cold weather

All good money makers and easy to do on a large enough scale

Add bacon, mushroom, and or ham for additional charge.
