Squirrel Recipes?

Checked the recipe book and was surprised not to see one. Thinking a smothered gravy served over biscuits would be good.

Every squirrel recipe I ever heard of was basically cook the squirrels down. Brown them really good and make a gravy.

Yep - Season with salt, pepper and garlic salt. flour and fry. Make gravy, add onion to gravy. Add spuriiel and simmer with a lid for an hour. Will be fall off the bone tender. f you like, you can add carrots, frozen english peas, frozen
wholw kernal corn and potatoes and continue cooking until they are done and have squirrel stew.

Works well with raccoon, ground hog, and gopher too. Regardless of what anyone might tell you, possom is a bit greasy, and you must spoon off the fat several times during cooking.

I saw a meat eater episode where they made squirrel dumplings they looked great.

I always cook in a crockpot with a bit of broth, then debone.

After that, I make whatever I want. Add to a sauté, a gravy, make tacos, whatever

I quarter and put the pieces in a dish. I try to get them packed pretty tight. I put a bit of butter and season with Tony's. Cover and put in the oven at 250 until they're tender, usually about 3 or 4 hours. I eat them like wings.

So basically the smothered pork chops, but with squirrel? That's what I had in mind.

That smothered pork chop technique would work fine. You might be surprised at how long you have to cook it before it gets tender enough though!


Some of the best squirrels I’ve ever eaten, my grandmother fried. She would pressure cook them first, then dust in seasoned flour and deep fry. OMG! I wish I could sit at that kitchen table again.

Yep. Pressure cooker on squirrels is an awesome tool. Before I fry, the cat squirrel will get a 15 minute simmer, grey will get 10.

Watched the dumplings video. Guy put them in a crockpot first with chicken stock. Sounds like a good idea.

I had it marinated and grilled once. It wasn't awful but I wouldn't say I would cook it that way myself.

Squirrel makes some of the best gravy there is. Deer gravy is a close second, especially when the deer is smothered in the gravy with onions.
