I put okra in mine. Nobody has ever complained. I didnt even know that was odd.
But I recently heard that my gumbo had vegetables floating in it and that was a no-go (trinity). He explained that competition judges dont want anything but meat, gravy, and rice. That really blew my mind but I wrote it off as I dont care for competition jambalaya either.

Hmmm.....well.....this is TD.....mpeople would downvote my gumbo on principle ...and most have never tasted gumbo. I mean, most people on here are like from Alex... Or worse

I like using sausage with a heavy smoke, like Paul's or Teet's or Rod's or similar... some people don't care for it

If I'm making a chicken and sausage gumbo, it's going to have cleaned chicken hearts and gizzards in it. If people don't know, then they would never ask. I take all of the chewy membrane off of the gizzards and cut the very top of the heart off. Both are cut into very small pieces before adding into the gumbo.

We normally just gently crack them into the gumbo to end up with a poached egg feel. Even better in a red bean gumbo.

I add 1/2" cubed bologna to my chicken and sausage gumbo every Christmas. My Grandma always did so I do too.

I don't care if you use home made, or jarred, or oil-less, you gotta have roux to be a gumbo. Otherwise, you have soup.
