Richards sausage quality?

Anyone notice a significant drop in the quality of Richards sausage lately? We use it quite a bit because its really mild. The stuff weve been getting looks as though it isnt smoked enough and is super fatty.

Meh, never cared for it. Not sure where you're located, but there are wayyyyyyy better options in South Louisiana than to have to use that. As a matter of fact I picked up a package of spicy pork sausage from Bourque's today

Ya, I guess it used to be very consistent.

They have been having issues lately. Not sure why. It’s been one of my favorites for years but I’m done. The last pack I had was so salty we couldn’t eat it. Consistency is not that hard but they have not been very consistent lately

Richard’s has a new owner who is obviously experiencing growing pains. I don’t think he had any experience in the Sausage industry.

the original richard family started a new sausage, making business called Cajun family traditions. The sausage is very good and that’s what I normally use for gumbo. Cajun family traditions also does andouille , hog head cheese and other variety of smoked meats. Rouses carries this brand.

Don't know where you live. But if you live in south Louisiana and buy Richard's or Savoie's sausage then you ain't right in the head. Soooo many better options than that trash.

If you don't live in the area then you can get in touch with one of the many, many places that produce quality sausage and some will ship to you.

I believe Teet's in Ville Platte ships out.

Not a sausage snob but I agree with this.

I don't think Richard's or Savoie's even smokes theirs. It's "smoke flavoring added."

If you have a Rouses in proximity, they carry Best Stop products and some Rabideaux's. New Orleans Smoked Sausage brand is very good.

For RB&R, Conecuh can work. Have never used it in jambalaya and would take a better chef than anyone in my household to make it work in gumbo.

I didnt know Cajun was started by the Richards family.

Cajun is what I've been buying lately. The pepperjack boudin and spicy smoked sausage after trying a grocery sample.

I like Cajun Family products andouille for gumbo... But Butcher Shoppe out of Hattiesburg has some great jalapeno cheddar sausage

Not sure where you live, but if you live anywhere in South Louisiana, there are a myriad of local made in-house sausages that will beat any mass produced sausage. If in BR; Tramonte's, Chris', Bergeron's, Iverstine, etc... Hell most grocery stores make their own. I will say that Best stop makes a pretty good sausage. It's mass produced now and you can find it in a lot of grocery stores, but the quality is top notch. I use it if i don't have time to stop at any local stores.

Just stay away from the sausage at Alexander's. Used some of their "deer sausage" in a gumbo. It must have had a shitload of paprika and cumin in it. It completely ruined the flavor of my gumbo. Not to mention it was very oily.

Richards sold out many years ago. They've been owned by more than one private equity firms out of CA I believe.

spot on.... the Richard family sold out in the mid-90's AND had an NC contract clause which expired years ago. The 2 Richard brothers and one of their sons wanted to get back into the industry and started CFT 3 years ago.
