Pulled Ham.
Try to find a bone in ham with the label "cooked in natural juices" instead of water added. sometime they can be hard to find, if you can't, get the water added one. This is the one I find in some stores.
LINK
Mix 1/2 cup of real maple syrup and 1/2 cup if liquid smoke. Inject half of mixture in ham. pour other half in disposal aluminum pan and place ham in it.
Smoke at 300 until ham reaches 200 degrees. Turn ham several times to let different sides rest in liquid. Test doneness by trying to remove bone . once it wiggles real easy it's done. Let ham rest then shred into large chunks. Enjoy

Nobody ever mentions fatties. Any combination of ground meats you can think of, stuff it with whatever, wrap in bacon. Easy to prep, short smoke time. And it looks cool once smoked (take your time on the bacon weave)

Just finished two chuck roasts on the Kamado.
These have been a huge hit around the house this year, never anything left when we do them. Use whatever sauce and cheese you prefer.

Prime tritip has been my go to lately.
I came here to post this.

You can get picanha cuts at Costco which is almost the same. It’s really good. I cook mine medium rare. I trim the fat side like you would a brisket flat. I think it’s called sirloin cap in the package.

Costco near me(Colorado) has em. $12.99 a pound last week.
Sam’s near me does not carry the prime tritip.
Couple hours smoke at 250 with pecan wood to 130ish then rest 15 minutes and sear on high heat. Really easy and fantastic.
Prime makes a big difference to me.

HEB has them for people in Texas. I almost picked up a prime cut yesterday but it was a bit more than I wanted to spend. So I went with the pork belly.

Local butchershop, but honestly it is a leaning cut. What you find at the local grocery will work.

Beef cheeks are awesome. Make awesome tacos and sandwiches. Also good on its own.

When I get bored I find myself making an Al Pastor, Beef Ribs, Beef Cheek or a few hens to make gumbo.

New Weber Kamado. First cook today, simple apple smoked chicken. Tomorrow, shredded chuck roast bbq sandwiches, 4th-wife wants pork ribs, Sat-homemade pork italian sausage links on homemade brioche buns.
