This also a terrible take. Two of those mentions are food pop ups. No overhead, no employees,. They tend to have better meat and ingredient quality.

Off Set Smoker, Envie Smokehouse if you can catch them, Roux BBQ is decent.

Fiber Relaxation: High heat forces muscle fibers to contract and squeeze out moisture. Cooling lets these proteins loosen up, re-anchoring free liquid inside the meat matrix.
Viscosity Shift: Melted fat and collagen are thin and runny at 200°F+. As the internal temperature drops, these liquids thicken

This extended resting phase allows extra time for collagen breakdown, elevating tenderness without overcooking

consistency comes from how bigger BBQ places rest their briskets and also the quality of the meat they get. I've owned a backyard offset to a double axel trailered offset, I've cooked great briskets on both. Resting your brisket in a warmer for 8-12 hours changes the game.

Top tier brisket

I've eaten a lot of Texas Brisket. His was the bottom. The dirty smoke for 3 hours makes the brisket bitter.

House would be at least $2.5 million in BR.
They still trim a good bit, More that you think they would.

Mr. Crawfish on Staring. Best I've had in this town.

"Point being, there's still margins to be made at $30 to $32"

No profit to be made at that price. Barely breaking even.

Not much difference. Cooked one with a prime the other day.
