Very good instructions from Sub.

I like to do cook mine similar to his except I like to include chicken along with pork and sausage. I also like the 3 to 1 meat to rice ratio. Oh and I prefer to use temple meat for a small jambalaya. For big ones the temple meat is too expensive.

re: Meat Grinder Recommendations

Definitely get a dedicated grinder. The kitchen aid attachments I would use only for very light and occasional work.

How do you plan on using it? If you are regularly grinding deer meat and such I would recommend getting something heavy duty.

I have a Meat double grind which has been awesome for ground meat. Double grind saves me from having to pass the meat through a second time.

The Cabela’s commercial grinders are pretty good too.

Maybe the old gen’s but not the new ones. People are still hung up on the old ones and all the problems they had. The new ones are a completely new design. Love my auto deploy.
I’d just like to add that you are awesome for doing this for your son in law.

I have had mine about a year and a half now. I did a little research and talked to some folks before hand. Pulled the trigger on one of the new auto deploy models. It’s has been absolutely flawless so far. Guys I talked to said Minn Kota really put in a lot of time and effort into testing the new models with some local guides before rolling them out for sale to the public.

Also, it’s probably double the weight of the previous generation models.

Anyone ever use Temu baits?

Made a trip yesterday and my brother-in-law put a beat down on me with a damn temu jerk bait. I had nothing like it. The big speckled trout were eating it up. Sucker was laughing his arse off and talking shite the whole time.

If you are all somewhat capable fisherman you shouldn’t have any problems. There will be some deckhands but you won’t have the same kind of personal hands on experience as you would with a smaller group. For many that doesn’t matter. Definitely the best value and you will get a lot of meat.

If you know what you are doing your group should be able to bring in a lot of fish. Be prepared for some people on the boat who maybe have never even held a fishing rod. This can cause some problems but generally shouldn’t be an issue for each group as the boat is big enough for everyone to spread out. I do know a guy who lost a big yellowfin tuna due to another guy with a different group on the boat but it’s a long story. Probably an outlier though and not the norm.

Each group will be assigned a different color. The deck hands will tag the fish from your party with the designated color. You can see some lopsided results on fish totals at the end of the trip. They will clean your catch and you get to keep your catch only. They do not divide the meat up amongst other groups.
Anyone will be able to put you on snapper. But . . the only way for 8 people will have to be split into 2 charters. Usually 6 is maximum for most charters. Only exception is a walk on trip with Sourthern Pride which is a big boat which takes out 25 people at a time. It is much cheaper but a very different experience.

It’s been nonstop rough through April due too constant winds. So not a lot of reports. However the time of the year is right depending on conditions. Sooo . . I would make sure to check wave height before going without a boat.

I have had bad experiences with too many dead crawfish when I have bought from Rouses on previous occasions.

For this reason I prefer buying from a smaller distributor.

Here is an example from an app I use. This is the gulf out in front of the Fourchon rock barges. The image shows platforms, and wrecks, and very importantly it shows the depth. As I zoom in it shows more detail.

This is from Garmin boating and I pay an annual fee. Works as a great backup when offshore as you have to download the map area that you intend to use so it will work without a cell signal.

I would suggest downloading an app such as Navionics, Garmin boating, or whatever that has detailed offshore info, topography, relief shading and such would be helpful.

Put this on your phone and when you have time you can pinch and zoom and find a lot of stuff just looking at the maps. It will tell you water depth and distance. The rigs and wrecks will be marked. Find a distance you are comfortable with going and search within that range.

Hopefully you have a gps trolling motor on your sea hunt as that’s a hell of a lot easier than having to tie up to the rig.
Let me help you guys out. Take your fresh lemons and purée them whole. Pour it in when you cut the fire. I been doing this for years. The lemon flavor is amplified 10X by doing this.
