Mayo vs Butter on a Grilled Cheese

Anyone heard of this?
I posted my dinner tonight on Facebook (a grilled cheese)
And people commented about substituting Mayo instead of butter. Anyone do this? How is it?
What about a butter/mayo mix?
What says the Food and Drink Board?

The eggs in whole mayo create a toasty layer on the bread

It’s all fat, but put spread that mayo on the bread or a juicy ribeye next time you throw something in a cast iron skillet.

I find that the mayo tastes kinda off when browned. Almost a “wet dog” smell but in how it tastes.
Butter reigns supreme IMO.

Light schmear of mayo browned in kerrygold…get at me.

Both! Use mayo on the inside with the cheese, and butter the bread on the outside. My mom's way of doing it.

I’ve only used Mayo as a butter substitute/food hack for grilling bread when I was out of butter. The oil in Mayo makes it look like a grilled cheese but it lacks the umami flavor of butter.
Here’s another food hack:
Are you out of cheese for a sandwich? Put butter in a hot pan and take a slice of bread with mustard slathered on it, and put the mustard side face down on the melted butter. It grills into a cheese texture with an almost nonexistent flavor of mustard.

So I used to think this was crazy and dumb. Then i tried it and I never use butter on my toasties anymore.
You get a near perfect crust and crunch with this method.
If you're on the fence try it.

Slather mayo on the bread, but cook in a small pat of butter.
I find the mayo adds a subtle tangy flavor that I enjoy.

Same here. Once I tried it, I never went back.

Life hack : go buy some cheese

My wife eats a lot of grilled cheese sandwiches, and I mentioned the mayo thing to her and she loves it. Mainly because it's much easier to spread and cover the entire slice of bread.
But yours looks like you did a good job with the butter.

You are sick if you put Mayo on a steak.

I like your snark, but if you didn't plan out your grub du jour, very few are leaving the house during a big game to buy cheese ...or have stores open for a midnight grilled ham & cheese.
In these cases, the grilled butter-mustard faux-cheese is uncannily similar to slice of american cheese in texture & flavor with just a faint hint of mustard. One of you non-believers should take 5 mins & try it out on a ham or turkey sandwich, if only to prove me wrong. (it doesn't work as a grilled cheese sandwich, just as a deli meat topping)
