Looking for a roasted Brussel sprouts recipe

Never tried cooking them before. Whatcha got?

My mother in law cuts them in half and coats them in olive oil and S&P and bakes them for 40 mins at 350.
I've never liked them, and hers are fkin amazing

You can also coat them in some bacon grease and roast. Then, toss in crumbled bacon, freshly grated parmesan and drizzle a little balsamic glaze over them.

I have been experimenting recently.
One important thing...always roast them cut side down. Take the extra time to arrange them, its worth it. I will usually add a decent amount of garlic, and I like some level of sweetness so in addition to salt and pepper, I like to add maybe basalmic or honey (towards the end), or brown sugar.
I also like a higher temperature, 425ish.
Last week I tried doing them for 5 minutes on stovetop in a cast iron and then 15 minutes in the oven. They didn't come out as crisp as I would like so I'm going to have to fine tune that one.

Cut in half, brush with avocado oil, sprinkle s/p/g and in the oven for 18 min at 420.

Are you just roasting them on a regular baking sheet?

Air fry instead of bake in the same manner noted above and cut your time in half.

I've got some beef tallow I need to use. You think that would work?

I melt butter and brush on, also add some minced garlic and black pepper. Bake at 350° until they begin to brown.
I also do similar for the air fryer. I use “roast” temperature for 8-10 minutes. Take out and shake ~every 3 minutes.

Yes, last week I tried on cast iron and it didn't come out as I expected but I can fine tune that.
I would try air fryer but my air fryer is pretty small.

I roast mine cut side down for 25 minutes at 425.

trim and cut in half lengthwise.
oil and salt.
Higher temp. 425 for 45 minutes. turn half way through.
at end reduce soy, lemon juice, sugar or honey, minced garlic and ginger to a glaze.
toss in glaze.
serve

You can add some cubed pancetta to that too.

I like to shred them or chop them into relatively small pieces before roasting so they're like this roasted green base for a rich dish. For example, roasted shredded sprouts as the base for braised short ribs or pot roast. A good substitute for grits/potatoes/rice.
I also like to toss the finished sprouts in vinegar.

cut in half, coat with flake salt and a tad of olive, damn hot black iron skillet and a good dollop of bacon grease, and saute' them (cut side down first...and let them crisp up before stirring around) until they look done. more S & P to taste and a good drizzle of Steen's over them.

cut in half, toss in olive oil and put in oven at 425. Meanwhile mix 2 tbl each of olive oil, fish sauce and Thia chili sauce. After about 10 minutes of cooking, add 1/2 of the mixture and toss the brussels to coat them. when brussels are tender to a fork, add the remaining mixture and toss and cook another 1 minute and serve.

I usually add some fine diced shallot. I also usually start on the stovetop in cast iron for a hard sear. My baking time is much shorter...maybe 10-12 minutes at @400.

You could do a week old dog turd that way and it would be edible.
Serious though, look up John Besh's recipe for them that he does at Luke. I can't find the recipe online but he does them in butter and wing sauce with bacon and they are crazy good.
