Not roasted but pan sauteed.
Fry bacon or pancetta and set aside. Use bacon grease to sweat trinity. then add brussels cut in half. Rough up before adding them so that some leaves are off. Salt, pepper, lemon pepper, Cajun seasoning, minced garlic to tase. When sprouts are nearly tender "as you like them", add Balsamic Vinegar reduction (Balsamic and sugar or Splenda, slow cooked until reduced by half). Stir and add 1/2 cup heavy cream and stir in. Allow to reduce by 1/3 - 1/2. Finish with 2-3 tbls butter and Add fresh grated Parmesan cheese.

The roasting in oven with olive oil ,salt, pepper is pretty standard in restaurants. Most places saute after they are cooled with bacon, or something along that line, onions or shallots. A balsamic glaze is a nice touch as well. If you can find the bigger sprouts they cook a lot better ( cut in half)

Throw them in the microwave for about 5 min to soften them. The coat with EV olive oil and seasoning. Then you can roast them in oven, air fry them, put them on grill or even sear them in a skillet!

FYI, Paul Prudhomme redfish blackening seasoning is awesome on them.
