They definitely all serve a different purpose, have been using the Blackstone the most lately just because it's the new toy.

What brand and model if you don't mind me asking? That's pretty low with air vents wide open, even with a water pan. Only other things I can think of are exhaust vents closed or ash blocking the inlet air even with the vent wide open.

It’s an old, old drum. It was actually in my wife grandfather’s back yard sitting there so I took it and fixed it up. Originally it had no air vent on the top, no thermometer, and no holes in the bottom of the charcoal pan

It’s got great air flow. I really think it’s just that I have so much water in it that the temperature won’t get above boiling.

Yeah, if it's a custom made drum it probably just doesn't have the proper airflow. Especially if it had no exhaust vent.

I would just remove the water. It's mainly there to stabilize the temp, may be doing too much. I normally cook without water. Too much in the cooking chamber can be prohibitive to good bark development.

Yes, but thinning the heard was good! I've stuck to the webers because parts are easy to come by, very versatile and very reliable.

I’ve gotten great bark on the ribs so far, but I’ve never even tried bigger cuts yet. I was too afraid of how long they would take to cook.

She may be right.....

I currently only have 2, my big Weber Kettle and my 17 inch Blackstone with the side burner/fryer basket. I find myself cooking most things on the Blackstone, unless I'm smoking something or cooking for a crowd. I can easily cook for the 5 of us on the small griddle, but when we have company over I'll fire up the grill.

As of next month it should be a Pitts and Spitts Maverick and a blaze gas with a griddle If I need will add a weber kettle specifically for hamburgers and hotdogs. Just have to see how the pellet cooks those.
