Left over pork butt

I have a good bit of smoked shoulder left from Sunday night. Ate sandwiches again last night. Any ideas for repurposing other than sandwiches or tacos? Thought about trying to freeze some, anyone ever done this? Does it hold up decent?

I freeze it sometimes. Works out fine for making sandwiches.

I have left over pork shoulder right now as well. Last night we did cheese fries and topped it with pork. I’m also going to use some to make tacos as well as stuffed jalapenos.
You could also do a pulled pork and grits dish.

I usually double ziplock meat for the freezer but no issues.

I had leftover pulled pork for breakfast this morning. Microwaved it with some cheddar cheese on it and threw 2 fried eggs and some jalepenos on top.
You can also freeze it, then reheat in a crock pot one day in the future...

Pulled pork nachos.
And you can definitely freeze the leftovers if you want to go that route.

I usually make enchiladas with them, then freeze for later use.

It freeezes fine, with leftovers I make breakfast burritos, quesadillas for lunch or dinner, tacos, cuban sandwiches, even goes will with a salad and bleu cheese dressing

It does freeze well
I make pulled pork pizza. Use your favorite BBQ sauce instead of pizza sauce. Add cheese and pulled pork. Real easy and pretty quick.
Can make regular size or small individual size.

good idea, I am going to try that.

Pulled pork enchiladas.
Roll, red sauce, cheese, oven.
I prefer flour tortillas. Small ones.

Pulled pork freezes really well. I vac seal it and use it for sandwiches. Tastes great.

Thanks for replies. Good to know it freezes well, hated to waste it.

Yep, freezes well. Good addition to a pot of beans or a soup/stew, too.

How anyone that cooks larger cuts of meat, or larger portions does not own a vac sealer is crazy. Makes so many things so simple to freeze and allows for buying in bulk.

Throw it on a baked potato, or a sweet potato.
