First was the sushi craze with Shinto, Tsubaki, Samurai, Tokyo, Sakaya, Masa, and Bonzai all within walking distance of each other. I guess ramen is the next craze. Lafayette went from zero to four in less than a year's time. Katsu, Izumi, Tokyo House, and now 99°C Ramen Noodle Express. More to come?

We went from 0 to 3 that I'm aware of here in Corpus in a relatively short period. I don't know if there might be more.

The trend chasing always puzzles me: for a while, it was burgers, then poke, and ramen had its moment. Why do these places always come in bunches?

Think it would work? I don't, but then again when I read Ramen, all I can think of is the 6 for a dollar packs I ate in school.

I make ramen from scratch all the time. The only thing it has in common with the cheap packages is that it is a salt bomb. Miso, dashi, and soy sauce all bring tons of sodium to the table. I would eat at a dedicated ramen joint all the time but I am fairly sure that I am in the minority in cenla.

Ramen is not something I’d think sells consistently well. I think I had the Hangover at Umami 3-4x over a year or so and was bored with it.

I usually associate eating ramen with cold weather, too. So I can't imagine a time where I'd be in Lafayette and want ramen.

Ramen is like an inferior version of Pho. Why would I settle for Ramen whenI can have pho?

because people go "oh xyz is making so much profit, i can do it too"

all these dessert places. all these tea places.

Finally making its way to louisiana when texas/cali and heavily populated asian areas had it for 10+years

I agree 100%. I much prefer the Viet food over Ramen. Blue Basil / Saigon Noodles will be around for a long time. These Ramen shops are just a fad that won't last here. The sushi places here better adapt to the Sushi Masa plan, $23.99 for all you can eat and it comes with a drink (alcohol or non) and dessert. Many have been dead when that place stays packed nightly.

The other reason why Masa is packed is because their food tastes just as good, if not better, than all but maybe 2 or 3 other sushi restaurants in town. It's a great deal, and the quality is consistently high. If their sushi was mediocre, it would be empty a lot of nights much like Kaminari (now Taste & See).

I was literally coming to post this as I agree completely. Ive had ramen about a dozen times now, and its not that I dont love ramen, it is pretty delicious after all and I love food, but it is no doubt inferior to Pho in every way a relatable dish can be. If Im spending money on something itll be Pho.
