Kartchner's can't miss itemsPosted by tewino on 12/28/20 at 6:22 pm

So I'm going for the first time this week. I love their boudin so I'm getting a bunch, but what else should I get? Do they have smoked boudin? What about their smoked sausage or andouille? I kind of feel guilty not going to Billy's while I'm right there.
Friend,
There is nothing that is not a can't miss item. As you well know, Kartchner's hit #1 on TulaneLSU's Top 10 boudin stands. Honestly, for the quality of the meats, it was not even close. Kartchner's was a clear #1, significantly above #2.
I recommend the fried boudin, regular boudin, and smoked boudin. No need to get fancy with the stuffed boudins, especially the crawfish stuffed boudin. It sounded great, but it was not nearly as good as the regular stuff. I also did not think the cracklin' was worth getting, but honestly, I do not think cracklin' anywhere is very good.
Bring an ice chest and load up on the prepared meats as well. They have delicious stuffed chickens, but one of my favorite items is their stuffed pork loins. I had one tonight, and it was fabulous, superb, just show-stopping. When I first saw the price of 8.99/lb for the stuffed loin, I scoffed. "I can get a regular pork tenderloin at Sam's for $1.50 per pound. What makes this one so special to justify increasing the price by 600%? Well, the spinach cream cheese stuffing and spices and outer coat of bacon made it just a great dish, better than any pork tenderloin I have ever had. It took just 30 minutes to bake in an oven and cleanup involved only my plate and silverware thanks to the foil. Get one, or better yet, get ten! Mother made a sneak visit there earlier this week and purchased over $500 in meats that are now being chilled in our freezers.

My favorite prepared item (so far) is the chicken sauce piquant.

My favorite boudin, Billy's is close 2nd.
I just got the spinach and sundried tomato sausage and it was awesome.
Also the pork loin stuffed with boudin was really good.
Only thing I didn't love was the stuffed mushrooms but that may have been more because of the way I cooked.

Which ones did you try? My wife loves the shrimp and crab au gratin stuffed mushrooms.
Kartchner’s definitely has a better freezer supply of different meats than Billy’s across the street in Krotz Springs. I tried some hog heads cheese and was very good. I also purchased a dozen pre made meatballs to add into the next spaghetti sauce I make. That pork loin with spinach stuffing does look interesting. Thanks for the tip.

Rice dressing meat and spice mix.
Tamales
Tasso
They carry a lot of the Cajun Power line of products that I'm just discovering for quick weekday meals.

The speed limit is Krotz Springs on 190 is 45. It changes on the bridge. FYI
Smoked boudin
Shrimp stuffed bell peppers
Boudin stuffed bell peppers
Crawfish balls
Smoked ham hocks - my favorites of anywhere. Great flavor.
Creamed spinach-similar to spinach Madeline
Smoked green onion sausage
Bacon wrapped stuffed mushrooms
Boudin stuffed Cornish hens
To name a few things...
The stuffed chickens are good, but not nearly as good as Hebert’s. Stop at the Hebert’s in Baton Rouge for those.

That sounds great. I'll try the sauce piquant and some stuffed pork or chicken. I'm a sucker for smoked boudin too.
