So many choices of things to pack and take home. But for my mileage, a cream cheese and jalapeño boudin ball, link of boudin, 1/4# of cracklings, and a tall boy of cold beer while sitting on the front porch or observing the posted speed limits is tough to beat.

My favorite thing I got there a couple weeks ago was the boudin roll-up. It was like a boudin filled eggroll, but it also had a touch of maple syrup in it to give it a salty/spicy/savory/sweet profile that was pretty much perfection.

The original location in Krotz Springs reminds me of an old country store from the 1980's. The new location in Scott is 3x's the size, very modern, includes retail cooking accessories, and has lots of freezer/coolers food items. According to the store Mgr., they offer over 140 different specialty meats, 25 types of sausage and 9 types of boudin. Hard to believe they've only been in business for 11 years as their food products are top notch.

If you do the Scott location, you can also stop by Best Stop, Billy's, Don's, & NuNu's to purchase several food items from each. Depending on the time of day and checkout lines, be prepared to spend 2-3 hours ... Billy's will take the longest as the wait and lines can get insane.

The Krotz Springs items just taste better to me....... old fashioned I guess. I’ve been extolling the virtues of Kartchners since they opened. Go get you some.

Duck smoked sausage, rabbit smoked sausage, Avocado & Corn to make dip, pork skins are all great. I do not think you can go wrong with any buy.

I haven't been to the new place, but I love the atmosphere and feel of the Krotz Springs store. Raised wooden building with a porch. Very old school grocery store.

The area in Lafayette where the new store is located is certainly full of various other food places to visit.

I've been to all the other stores in Laffy. Easier to make a trip to 1 spot than 2 despite the ambience of the other location.

I stopped at the new Scott location today as I drove back to Houston. I got a maple roll-up, a crawfish ball, and a little bit of cracklin. The roll up was good. I didn't think the crawfish ball was good at all compared the Billy's. The cracklin had a really nice texture but could have had more seasoning.

Just stopped on my way back from Austin. Got a maple wrap a few links of regular & smoked, the frozen bag of Chicken Sauce Piquante, some brown sugar Steens sausage, and a mini custard pie. I already inhaled the maple wrap - it gets a thumbs up.

Stopped at Kartchner's in Scott for the first time over the holidays, here were my thoughts on the items I purchased.

1. Boudin - excellent! This boudin is different from all of the others. It's thicker, meatier, seasoned differently. I can totally see how some people prefer this over the others. It can totally hang with the rest of the boudin options in scott.

2. Jalapeno Cream Cheese boudin ball - Very good. I'd put it as high quality as Billy's PJ Balls. It's just a different flavor/texture. I can see being in the mood for a Billy's PJ ball, or in the mood for a Kartchner's JCC boudin ball. I wouldn't say one is better than the other. There's room for both imo.

3. Duck and Andouille gumbo - Awesome. Restaurant quality. If the rest of my family didn't find it too spicy, I'd never cook homemade Duck and Andouille gumbo again.

4. Bacon Wrapped Spinach cream cheese pork tenderloin - Ok. The tenderloin was a good cut of pork. The bacon used was good bacon. The cream cheese and spinach filling was perfect. Just too much damn cajun seasoning on the outside. It's all I could taste. If they could make one that isn't slathered in their seasoning blend, it would be perfect.

Final Verdict: Kartchner's fits in perfectly on exit 97. They offer similar, but different products from the others. I feel like they enhance the area, instead of add competition to the existing stores.

Being as we reside at Exit 97 I told her we should have some samplings of the newest comer to the Great Boudin Mecca. I arrived home yesterday evening and was hit with a fabulous smell as soon as I opened the garage door, I could smell the spinach wrapped in pork wrapped in pork awaiting in the oven. I asked Wife how long everything had been in the oven and was informed "about 45 minutes". I panicked a bit, loudly proclaiming "That's longer than suggested by TulaneLSU!". Fortunately things were not as overdone as I'd feared and we were able to enjoy a delicious meal and I reminded her that a gratuitous "thank you" is owed to you.

Kartchner's rocks and you have the free gun range just down the road. Makes for a great day trip within an hour of BR. Bring a big ice chest, guns and plenty of ammo.

What an absolutely heart warming delight to read your beautiful words, savor your delicious photo, and share in your first experience with that wonderful dish. Wife seems to be a good hearted woman -- one who cares deeply for your well being. Please forgive her for not getting boudin and cooking for 45 minutes. The bacon jacket and the cream cheese filling allow for some lenience in cooking time for those heavy on the oven. I was relieved and thrilled to read how the longer cooking time did not diminish the dish's excellence in any way.

Please give Wife my warmest well wishes and tell her to keep loving you by providing these most special of dishes. What a woman, and I think Mother would share in my high remarks about her.
