I always get a kick out of this take. I see it a lot here. It's as if no one on the planet is capable of reproducing food outside of Italy or Louisiana. Just because Bob from Denver made a jambalaya, it can't be good or if Pedro in Mexico City made veal piccata it is trash.
It's insane.

I’m going off people in other parts of the country having no fricking clue what “Cajun” cooking is.

There's no special mystical technique to cooking "Cajun" food. The problem is, most of what people try to do with it outside of Louisiana is turn it into some sort of goofy caricature and focus on that first over the actual food being prepared and served.

I had some excellent comfort food from a Cajun themed food truck in Salt Lake City, UT of all places. Lady and her husband were located there from LA by the military. Salt Lake also had a great southern inspired BBQ place.
My coworker from Lafayette claims this place in Bham has the best shrimp poboy he's ever had. I haven't been there yet.
My brother said all the Chinese food in China was f'ing awful when he spent two weeks there.

People in Louisiana don't have many objective facts about the state to be proud of so we rely on subjective assessments about having "better" food.
