How would you like your eggs?

I found myself at a produce market and they were selling 36 eggs for $8.00. I had almost sworn them off with grocery store prices.

I’m like Bubba with shrimp when it comes to eggs. I love them in any iteration. But I’m currently stuck on slow cooked low heat scrambled. As a younger man often in a rush I’d do a high heat quick scramble. Firm but less taste.

Fried over easy with some buttered toast is one of my favorite meals as well.

Sunny side up, over easy or medium boiled in crab boil. Crack the shell and let rest in the crab boil for a few minutes

Fried over medium. Gotta have them crispy edges.

Huevos rancheros can do it for me too sometimes.

Baked casserole with eggs is one of my favorites.

Crack a dozen eggs, add cheese, sausage or bacon, onions, peppers or spinach with some cream or milk. I always add a little baking powder too but it's not necessary.

Bake at 350 till it browns and firms up.

Leftovers are good for days... pop in the microwave wrapped in moist paper towel and it's as good as fresh out of the oven. Can cut in squares and freeze and have something quick for dinner with a salad in no time at all.

This is a spinach one with no meat. Just use what you have on hand.

My all time favorite way to eat eggs was discovered only recently. In the butter section of the grocery store, on the top shelf, you will find a fancy truffle butter. They also have “garlic and herb” and “steakhouse” flavors but those have not been tried. Get the truffle butter and a loaf of French bread. Super one Carries a loaf of jalapeño cheddar that is fire. Butter the bread with the truffle butter and make grilled toast in a skillet with it. Then, toss a tbsp of the truffle butter in the skillet and fry an egg over medium and serve on the toast. Just a dash of salt and pepper to finish it.

OMG.

Honorable mention is a six minute boiled egg with instant ramen.

Been doing burritos a lot lately. Scrambled eggs, shredded cheddar, bacon or sausage, some diced potatoes out of the air fryer and a healthy dose of Cholula.

I eat eggs several times a week. Mostly I scramble 2 eggs mixed with a bit of skim milk, hot sauce, salt and pepper over medium heat; then mix in some pico de gallo. Not too unhealthy and fills me up. I also like to make an omelet with feta cheese and spinach.

This me, but hold the cheese.

It's even better if it sits for a while and cools down.
