Soft scramble the Gordon Ramsey method with a little sour cream, salt and black pepper.

Same here. Once I watched Alton Brown's method, I learned how scrambled eggs are supposed to taste. But it took way too long for my preference, especially, if doing a bunch of eggs. I also ditched the whisk. I can cook them on med / high heat now with a spatula and they all come out wet / moist. I just have to be quick with the spatula and sometimes pull the skillet off the heat while I work the spatula.
I prefer fried over easy or sunny side on toast (or pancakes) as well.
Actually, poached is pretty fantastic too. I'll serve that over some hash browns or with a creole tomato.

Two eggs beaten and added to a hot oiled skillet and swirled thin until a skin forms. Add shredded cheese (+onions, shrooms, hot sauce, etc) down the middle. Fold each 1/3 side over the cheese mixture and place the spatula on top. Remove when the cheese has melted. That's my cheese omelet.

Same. But all good answers.
Like others have said, after slowing down and taking the time to make slow scrambled it changed the game for me. Scrambled eggs were just a medium for cheese, bacon, spinach, mushrooms…you get it. But slow cooked eggs only need a dash of salt to be heaven. But I do add a good bit of pepper from the grinder.

I guess it is. Maybe just a lower carb version.
One advantage over a smaller quiche is you can get more eggs in the dish if you're feeding a crowd.
Another egg dish I like to make is migas. Mine probably isn't totally authentic, but I crumble up tortilla chips in the egg along with onions and peppers... scramble, top with pico or salsa and serve with tortillas.

Jean Georges eggs are my favorite. Though I rarely cook them since I add so many extra egg whites to my scramble it's not worth it.

Sort of between over easy and over med. I ran across a cooking method for frying eggs that I use several times a week.
Crack the number of eggs you want to cook, usually 2 or 3, in a serving and place in bowl. Pour bowl of eggs in non stick 8" frying pan with just a little melted butter on med./low heat and cover with glass top lid.
After a few minutes the yoke will begin to turn hazy white beginning at the bottom moving to the top. Just a little white at the bottom of yoke will be over easy, half white will be over med. and the yoke top to bottom covered in white will be over hard. No need to flip.
Slide the eggs on a plate of stone ground grits and repeat for another serving.
