Homemade Chicken Salad

Needa get back on the meal prep train. I've never attempted homemade chicken salad before. Any tips before copying a random google receipt? I was thinking about smoking some legs quarters or would rotisserie chicken work better?

I roast a whole chicken fryer. I find that smoked chicken is too overwhelming for chicken salad.

Depends on how you like it. Some like it creamy like a calvins and some like it chunky. I am somewhere in the middle, but like a little crunch from celery and red onion.

I just made some smoked turkey salad with the leftover smoked turkey I did a few days ago.

I chopped up the turkey fairly fine and added the following:

Both onion and celery minced fine
Green onion chopped fine
Sweet Relish
Dill Pickle diced fine
Boiled eggs cut small
Mayo
Salt and pepper to taste

The amounts of each of the above are dependent on the amount of meat used and to your preferred taste.

Both would work, but will (obviously) provide different flavors. We prefer the chicken to be finely chopped, so I use my vegetable chopper to break down the chicken.

Mayo, brown mustard, dill pickle, celery, salt (celery salt), pepper is a good classic recipe.

If you want less calories and/or higher protein, sub out some of the mayo with greek yogurt.

Growing up, Mom always made chicken salad with cream cheese instead of mayo- VERY DELICIOUS.

If you use smoke chickens, a little Worcestershire is a nice addition.

I don't really use a recipe, I just go by looks and taste- not really sure if that helped you out at all, but might have saved you a Google search

My daughter makes a great one, i know her basics, Chicken, Avocado Mayo, Fine chopped Walnuts and Cran Rasins. I could eat it everyday.

My wife makes a great turkey salad with Thanksgiving leftovers. Probably my favorite way to eat the turkey. Her's is heavy on the celery and sweet relish. Just mix and adjust until you get it the way you like it.

She experimented with trying to duplicate the basic Chicken Salad Chick recipe and believes butter is the key to their chicken salad.

I smoke a whole chicken, chop it up.
Mix with plain green yogurt, worcestershire, hot sauce. lemon juice, chopped celery and purple onion

Pro tip, crisp the chicken skin in the oven or air fryer, crumble it on top the chicken salad sammich

I like to mix a big batch with only the dry ingredients, make portions big enough for a day or two, and as you go through it, mix in avocado as a sub for mayo. You'll still use some mayo, but it will be a lot less. If you premix the avocado with the big batch, the color gets a little funky.

I guess I am a minimalist when it comes to chicken salad. No nuts or grapes or crunchy things, even onions, which is why I grate the onion. Probably weird but that's the way I like it.

Here are the only ingredients I use. Lemon juice is the key ingredient in my opinion.

chopped chicken
lemon juice
grated onion
chives
Dijon
Mayo
salt
pepper
paprika

Edit: I don't care for smoked flavor in chicken salad so rotisserie would be my choice between those two. Or just poach some chicken in a little water. I think it turns out moist and perfect that way.

Here's the recipe I use. I think it's important to dice the chicken and not shred it. I believe the texture is better.

I typically grill the chicken or roast it over wood (not smoke, that's too heavy).

4 cups diced chicken breast or boneless/skinless thighs.

1 stalk celery diced

1 bunch or a little less of green onion or 1/2 cup diced sweet onion.

1/2 tblsp dried tarragon and 1/2 tblsp dried dill

1 tblsp dried parsley

1 cup mayo

1 tbsp lemon juice

1 tblsp Dijon mustard

Black pepper to taste.

If you're salting/seasoning your chicken prior to cooking, then leave this out.

A little more than 1 cup of firm, sliced red grapes or diced apple

My go to recipe from allrecipes.

My wife doesn't like Feta so I often make it without, but the version with Feta is also great. The red bell pepper and dill really make it standout.



3 cups diced cooked chicken

2 large stalks celery, diced

1 medium red bell pepper, seeded and diced

½ medium red onion, diced

6 tablespoons mayonnaise

6 tablespoons sour cream

1 (4 ounce) package feta cheese, crumbled

2 teaspoons dried dill weed

salt and ground black pepper to taste

Directions
Mix chicken, celery, and red onion together in a serving bowl.

Stir mayonnaise, sour cream, feta cheese, and dill together in a separate bowl. Pour over chicken mixture, and stir to blend. Taste, and season with salt and pepper as needed.

rotisserie chicken + Buffalo sauce + mayo or ranch or blue cheese dressing + blue cheese crumbles. Add red onions if you want a crunch.

I like to use a boiled chicken like my momma did

While fryer deboned and chopped fine
6 eggs
Fine dice celery about half cup
1/4 cup sweet relish
2 tablespooons grated onion
2 tablespoons brown mustard
Mayo to make nice and spreadable
A sprinkle of Tony’s
Salt and pepper to taste

Boil whole chicken with seasoning, onion, celery and a few pods of garlic
debone chicken and run through a grinder (not a chopper)
For a half of the chicken I use 5-6 boiled eggs mashed with a fork chop onion and celery. Mix together with mayo (blue plate) add black pepper and salt if needed. Save the chicken stock.

Kewpie Mayo (Japanese Mayo) has a little more bite from acid and umami and makes a great chicken/egg salad.

Close to what I do, except no celery. Grinding is the key. I add low sodium chicken base to the mayo before mixing.

Rather than use sweet and sour pickles I grew up on chopped dill pickle or dill relish, and for a touch of sweetness and crunch, chopped apple (back in the day just general red delicious)
