Gumbo on the back porch overnight, yea or nay?

Cooked a big gumbo yesterday, didn’t feel like making space in the fridge. Put gumbo pot out in the back porch last night. Temps were in the low 30s I didn’t think anything of it, my grandma used to do it all the time and she lived to be 94. My wife acts like I’m a Neanderthal and am trying to kill the family. I checked the temp on the fridge it’s 42, so last night the gumbo was kept colder than it would have been.

So, wise men and women of the F&D board am I wrong?

I think if you left the lid on it, it’s more than ok. Womenz is dumb.

Oh yeah lid on and I added a heavy cast iron frying pan on top to hold it down in case there were critters about.

My mother and both grandmothers would do that only if there were no oysters in it.
Would stay inside if oysters were added.
Don’t ask me why, but all three did it that way.

We had a big freeze 3 years ago. I bought groceries right when it started. I got drunk and just left them in my car for 2 days.

You're fine. Our weather is colder up here, but I always use the great outdoors to cool a big pot of soup instead of making my fridge work harder.

I use a tie down strap thru the pot lid hooked to the patio table to keep the critters out.

Porch appears to be better than fridge. But your fridge temp needs to be sub-40 degrees. Turn the thermostat in your fridge down to get your temps around 36-38.

Bacteria grow if the food is a certain temperature for a certain amount of time. First thing you have to think of is whether the gumbo is COOL before you refrigerate it. If you leave it in a large pot, it is not cool. The middle of the gumbo will not get cool to the right temperature in the right time. You have to put your food in small, shallow dishes to make sure it’s cool in the refrigerator (if it’s not cool before you put it in).

If you leave a warm pot outside, or in the refrigerator, it is NOT considered safe. This doesn’t mean there is bacteria - or if there is bacteria, that you will get sick. Some people will be fine, others will not.

If your pot is cool, it’s safe in the refrigerator. Will it be safe outside? That just depends on the temperature and the wind. But the gumbo has to be cool first. And if you never took it out of the big pot, I doubt it’s cool - unless it’s a smaller pot.

And grandmas may have done it, it doesn’t mean they didn’t have bacteria or they didn’t get sick. It just didn’t kill them. Most food poisoning cases, people just think it’s a stomach bug and never give it a second thought. But it doesn’t mean your maw-maw’s gumbo was safe outside.

Made a couple of hundred lbs of boudin a few years ago. Temp was in the high 20s so was vac sealing and setting the bags on the porch to cool. The cold concrete helped cool it quick
