There is absolutely nothing like fresh from the field corn on the cob boiled in a little bit of crawfish boil and smeared with butter.

100% agree on the corn
For me though, I love it grilled with a little paprika butter rubbed on it. So good

Braised fresh artichokes
halve and clean the artichokes
put 3 tablespoons of butter in a pan a little over medium
brown the artichokes for 10 mins until you have a nice brown crust on the flat side
put in a cup of chicken stock and bring to a boil
simmer for another 25 mins
eat

collared greens/mustard greens, cooked down with a ham hock or bacon and lots of seasoning and chicken base.

I soften the butter and mix in a little crab boil, then roll it up and add what I want to the corn dish before I put the hot corn in it.
Fresh picked corn on the cob is my favorite vegetable.
Asparagus is next in any form.
Any roasted vegetables.

Grilled asparagus with evoo, fresh squeezed lemon juice and chopped fresh garlic. Let them soak in that mix from the time you light the coals until they're ready to go on the grill. Grill 'em until they have a nice char but still have some bright green and crunch. Or give 'em a good all over char until they're kind of soft. I can go either way. A little sea salt and fresh ground black pepper and, if necessary, the slightest squirt of fresh lemon juice before serving.
Best served along side a grilled ribeye. If I'm serving mushrooms sautéed in butter and garlic with the steak then I'll omit the garlic from the asparagus. Sometimes I'll add a splash of Worcestershire instead.
