When you have that roux going good and drop the trinity in it for about the first 3-4 minutes nothing smells better.

Fresh baked cookies too.

I made a bacon gumbo on top of an Ole Smokey one time. The smells coming from that thing...

When I worked downtown, I loved the smell of bread baking at Flowers Bakery.

I had a temp job at Flowers Bakery back in the 90's. It was heaven on earth. Occasionally we were treated to fresh loaves out of the oven with lots of butter.

I can't believe nobody has said onions sauteing. I always thought if I had a restaurant I would always have some going in the kitchen.

I have many, but one that struck me recently was when I was going to Peche. We parked in the lot behind the restaurant and the aroma of the open hearth cooking whatever was on it at the time, was heavenly. It resulted in my ordering the whole roasted fish, which I shared.

I agree, especially in butter. I LOVE the way onions, garlic and bell pepper smell together, especially after deglazing a pot of meat drippings.

Onions sauteing in bacon fat tops it for me in the onion sauteing department.

Yes, southwest omelets cooking after the bacon has been fried is amazing. Especially with biscuits in the oven and coffee brewing.

I will say, for outside cooking, it is tough to beat the smell of coals lit and smoking. It permeates the neighborhood. My Uncle, who lives about a block away from me lights his pit every Sunday morning at about 10:30 am during football season and it brings a smile to my face every time I walk outside. Football is finally here!

The combined odors of habaneros drying in the dehydrator and garlic roasting in the oven is intoxicating.

Everything listed before.

Community Coffee roasting when crossing the bridge.

The smell of fresh cut lawn and a crawfish boil.

The smell of a pile of leaves burning and something good on the green egg.

Hot grease for frying..... but it has to be clean oil, not that dirty stuff.

I also like the smell of mustard or turnip greens simmering. And, veg beef soup.
