Last night I was frying fresh shrimp outside and realized that they have a light clean aroma while in bubbling hot oil.

So many good things listed here. I will add a couple of strange ones.

When I was a kid there was a cottonseed processing mill in Jackson on West Monument Street. There may have been more than one of them. I haven't been there in a long time and have no idea if the mills are still there. I think they roasted the seed and then pressed it to harvest the oil, which was sold as cooking oil. I can still close my eyes and bring back the scent. There is still one in Greenwood on 82 highway with the identical smell. Those (60 years ago) were back in the days of cooking with cottonseed oil instead of vegetable oil, corn oil or canola oil.

The other smell is the midway of the State Fair in Jackson. The smell is wonderful. Cotton Candy, grilled sausages with onions and green peppers, popcorn, pronto pups, beer, burgers on grills under the restaurant tents and all other kinds of fried stuff, with those mild undertones of cow shite drifting out of the ag buildings.

Anything my mom cooked....she was a great cook...sure do miss her and her cooking......

Anywhere near Bush Gardens in Tampa when the brewery was roasting hops. Made my mouth water.
