Those Edwards "thaw and serve" pie's are pretty damn incredible. Lemon meringue pie does me well.

Texas Sheet Cake. Almost every Junior League cookbook has the recipe. You frost it while still in the pan and there are pecans in the frosting. Neither my husband nor my son like pecans in the frosting and I don't want to make it without, so we are at an impasse.
A guilty pleasure one because a lot of people frown on it because it's not really a "scratch" dessert, but cherry dump cake. Cake mix, canned cherry pie filling, butter, pecans. Lots of pecans. Top it with vanilla ice cream and it can't be beat.
Apple Brown Betty or Apple Crumble, whatever you want to call it. (Lots of pecans.)
Do y'all remember a dessert that was popular years ago, Chocolate Delight? I'm sure there are a million names for it, but the base is a crust of flour, butter, pecans, then a layer of chocolate pudding, whipped cream, etc. etc. I haven't had it or made it in many years, but I always loved that one.
I want pecans in everything!
In my old age, I'm loving lemony desserts. I made some lemon curd over the holidays and gave a few jars out. I found out later that one of my friends didn't eat any because I'd made the mistake of telling her that it was really good on Greek yogurt and she doesn't eat yogurt and couldn't figure out that she could eat it on a million different things!

We had this thing called "The Pie" It was a chocolate and caramel pie and the back end of the crust was a huge thick piece of chocolate. I think Sammys actually served it as well. I have never been able to find it in a grocery store.
