I've heard that a lot of butchers/meat department workers keep hanger steaks for themselves. No idea if that is true though. I know I've never seen it at the grocery store, and the butcher shop I sometimes go to told me they have a hard time sourcing it as well.

I agree. Love that you get both the filet and strip. Beautiful combo

My mood changes but a prime strip cooked med rare is hard to beat, rib eyes and fillets have their place as well

Favorite: ribeye

Most underrated: sirloin cap or chuck eye

Used to be ribeye, but lately I’ve been partial to filet. Ribeye cap is still up there close to filet for me though.

Of the more popular cuts, my least favorite is NY strip.

Porterhouse for me. You get 2 of the Top 3 together connected by a bone.

Now, If I could get a steak with a ribeye and filet I would vote for that one.

I also appreciate that each one brings something different to the table. Sometimes I want a sirloin.

Prime NY strip is hard to beat. Used to be the ribeye but starting to become too fatty for me.

This 100% to me. The best bite of a ribeye is better than the best of a strip, but a strip gives me more good bites.

It's science
