we are roasting a goat in the Cajun microwave.
Never done a goat before so I have a pork roast as back up LOL

I'm doing shrimp stuffed bell peppers and having them with pasta and a nice homemade red gravy I have frozen from when I made a large batch of gravy for lasagna and had leftovers.

Was wanting to do ham and sides tomorrow, but I couldn’t find a small ham anywhere I went. So I got corned beef, but I will probably go to Winn Dixie looking for small hams today and freeze the beef.

Carrots. Lemon butter asparagus. Mac and cheese. Dinner rolls.

On actual Easter Day we are going to a bbq so I’m sure it will be a mixture of things.

Rouses is advertising spiral sliced hams for $.77 a lb. in today's paper here in N.O.

It is a Cure 81 and to get that price you have to spend an additional $25 worth of groceries. With today's grocery prices, that ain't hard to do.

Seriously. I do ham on Thanksgiving and I can never find one small enough for 2 people. I cook it in the Instant Pot, too, so I have to chop off a good portion of it just to fit it. It's delicious, but we end up throwing out the rest because we eat ham exclusively for a week and are so tired of it.

The parts we hack off are super helpful when I make collard greens, though.

I'm smoking a pork butt...wife is baking 2 cakes. We're going to the in laws, but thankfully her mom has finally relinquished the cooking to us!

Like Boogie said, it’s just us two. I found hams at Fresh Market but they were large enough to feed 10+ people. I don’t need that.

How do you Instant Pot ham? I’m interested in this option.

I've never done it, so I won't be of any help. I always put mine in the oven to heat and then near the end hit it with the glaze to finish it off.

I use this one.

I usually only add the dijon, worcestershire and a little bit of clove because I prefer savory over sweet and those play nicely with the honey.

It's super easy and so good.

Fun fact: I made this ham for the first time 2 Thanksgivings ago...ended the night with an engagement ring. Sure, we had been together for 5 1/2 years at that point, but I like to think that my ham is just REALLY good

Roasting a leg of lamb (first time!) for my Dad and myself with some roasted potatoes and veg. Got a nice bottle of Malbec and a fruit-topped cheesecake for dessert. Looking forward to a great Sunday!

I didn’t know who was going to come over and who wasn’t. My brother and son weren’t going to be able to make it in but are now. I decided to cook since they’ll be here. I’m keeping it simple. Ham, Mac & Cheese, Mashed Potatoes, Rolls, Tea, and a Red Velvet Nothing Bundt Cake for desert. I wanted banana pudding but, happy wife happy life won out.

Having the MIL and SIL over. Ham (had a gift certificate for Honeybee. Damn ham was $96!)
Dirty rice,Mac and cheese, green beans, carrots, and salad.

Dessert: banana pudding, fruit, amd rice Krispy treats

Going out here. Currently camping at Santa Rosa RV Resort in Navarre Beach for next 2 weeks.

Daughter, grandkids and a couple of great grandkids live in Ft Walton Beach.

Taking them to the Bavarian's Wirtshaus in Ft Walton Beach for Easter dinner.
Outstanding German food if you're ever in the mood for German while in Destin/Ft Walton/Okaloosa/Navarre Beach area. Worth the drive...

I put a prime brisket on the smoker. I started on it Friday with the dry brine after trimming. Made some homemade BBQ sauce too, I think it came out too sweet but people like it like that. I have some more tangy sauce in the fridge, I guess I should measure better when I make it... I just sort of eyeball the ratios...

Sunday lunch with family - stuffing some pork loins.

Tonight's dinner for two - Lamb chops with bernaise sauce and a very good bottle of St. Emilion.
