Italian sausage and bratwurst are fresh pork sausage. It's all pork sausage with different seasoning blends. You're asking for "Cajun sausage" or a "country sausage with sage". This may be why it's hard to find in certain areas because fresh sausage to them may mean bratwurst. Fresh sausage to Louisiana may mean "Cajun" flavor. Fresh sausage to Alabama may mean "sage" flavor.
Most such sausage is going to have some sort of ethnic bent. I'm not aware of any sort of general generic "fresh pork sausage" that does not.
There's fresh sausage everywhere I've ever seen for the most part. You may just have to be willing to tweak your specific "wants" a bit.

Green's Sausage House in Temple, Tx. Has better fresh sausage than any place in South Louisiana! And until you go there and get some...just fresh pork..and put in on the pit and get a fresh loaf of Evangeline Made Bread with some French's mustard..grill your sausage and make a fold over....you can't dispute my assertion. Hell even cook some and smother it and make a gravy...still the best!!!

I always viewed fresh sausage as the pork equivalent to family pack ground beef. Just another way of moving some product that may be approaching the end of it prime shelf life. It’s a great way to make use of it. Grind, toss in the spice blend, and repackage. No cold smoker needed.
I like store made fresh ground pan sausage and well as the link varieties. I regularly grab that over some Jimmy Dean.

Nah man, all those Germans and Poles who settled in the Midwest completely forgot about sausage. Only the ones that came to Gueydan brought their sausage game.

Apparently it’s pretty popular in the Midwest too. A girl used to work with, from the Philippines but transplanted to Indiana, close to Chicago, used to ask me about fresh sausage. Not much to mention in central MS other than Johnsonville in the local grocery store. Told her south LA was basically her closest option. It’s sad that more places don’t offer fresh sausage.

I have no problem finding on a regular basis good sausage. I also have found it all over the country. I have not found or looked for it out West when I go out there. My experience is all over the south but O have also had good deer, pork, and blood sausage from southern Illinois. They have meat lockers they put their meat in downtown.
