Does no one else in the country have fresh sausage like South Louisiana?

Always blew my mind. Nothing but smoked sausage everywhere else. Like it never crossed their mind to put it on a pit (or make a gravy with it) BEFORE they smoke it? I was in TX last week and a friend had never heard of "fresh" sausage.

Italian sausage is extremely popular throughout the country as is bratwurst. Both fresh sausage.

smoking some fresh rouses green onion sausage will be better than any of the packaged smoked sausages you can get.
I think you can probably find fresh bratwurst around the country. it might be frozen though.

North Louisiana has no idea you can cook link sausage without smoking it. I brought a deer to a place in Simsboro that processes 3-4k deer per year asked about fresh sausage and the reply was "well, I guess we could give it to you before we smoke it."
I brought some to cook at our club north of Shreveport and the rednecks were completely flabbergasted and acted like it had to be grilled for 4 hours before it was edible.
One more example...my brother lives up there and loves it when I bring fresh sausage and grill it at the deer camp. He calls and asks if I'm bringing "some of that smoked sausage that's not smoked"

I should've clarified. Aside from italian sausage and bratwurst. Like fresh pork sausage is what I meant.

Yes. People outside of Louisiana make sausage. Shocking, I know. There are plenty of local sausage makers here in Alabama. Good ones too.

I think it was mostly a way to package and preserve meat. Cured and/or smoked.
Mexican Chorizo would be considered a fresh sausage

Are we sure this is accurate? Sausage gravy is a normal thing across the south - not just Louisiana.

Italian sausage and bratwurst are fresh pork sausage. It's all pork sausage with different seasoning blends. You're asking for "Cajun sausage" or a "country sausage with sage". This may be why it's hard to find in certain areas because fresh sausage to them may mean bratwurst. Fresh sausage to Louisiana may mean "Cajun" flavor. Fresh sausage to Alabama may mean "sage" flavor.
It's a great example of sausage flavors and types of sausage being regional. This can be seen in smoked sausage as well: Louisiana smoked sausage is "Cajun" flavor, the deep south smoked sausage is "breakfast sausage seasoning or sage" flavor. Texas smoked sausage is usually beef or beef/pork and simpler with salt and pepper, maybe garlic. The majority of the US uses kilbasa style smoked sausage.

There's a butcher just up the street from me that makes amazing homemade sausage. About 40 alone right here: Paulina Meat Market
