I used to have a sales territory in Louisiana. The food was wonderful there compared to the rest of the South....
...but the Shrimp are better on the Mississippi and Alabama Gulf Coast, also in Pensacola...
...however, the rest of the Gulf Coast just doesn't do something as good as Catfish Atchafalya....or any other of the many variations thereof....
...but our shrimp are better, and I think our oysters are too.

How so? I've never really heard of people comparing the shrimp between the states.
I'm guessing the Royal Reds from Alabama and Florida deepwaters would be considered better than La shrimp.

Just the non-chain non-corporate restaurants along the Alabama Gulf coast but also Mississippi and Florida at least until Pensacola seem to serve a higher quality shrimp. There are some that don't. One popular Mobile area Icon serves shrimp that taste like they came frozen from Vietnam, but the Mom and Pops seem to serve a better quality shrimp than I got in Louisiana. The Louisiana shrimp just don't seem as big, as fresh, or cooked as well. That won't stop me from ordering half and half fried shrimp and Etouffee just about anywhere along I-10/12, just always thought the shrimp back home were better, we just can't get the Etouffee part, and when we do, it tastes like the can it came out of. There is good along with the not quite as good.
Now, don't get me wrong, all of them, in all those places, were still quite delicious, and the typical dishes in Louisiana are unique, I just always felt like the typical good shrimp at a good restaurant along the coast was better in Alabama, Mississippi, and Florida.
I will be happy to learn otherwise. And I never knew what chicken stew was, and never like red beans and rice, until I went to Louisiana. Best chillie I ever had hands down was cooked by an Acadianan.

I can only really compare Louisiana and Florida, but Louisiana shrimp tastes a little... muddier? while the Florida shrimp taste a bit cleaner. Really only noticeable when boiling. Fried, it's all the same.

What an asinine question …. I’m assuming you mean the states because I’m in se Asia for work and a 1.50 bowl of noodle soup has more complexity and depth than any gumbo in Louisiana.
I guess you’ve never had Mexican in Los Angeles, Cantonese in NY or SF, Cambodian in Mass, seafood in New England, pizza at antico in Atlanta. Get out more - it’s a big country and an even bigger world

Some of the worst food I've had outside La. is when eating at restaurants that think they cook "Cajun or Creole" and that shite is usually pretty bad.
It's like they think if they add some Tony's and Tabasco to the dish it makes it authentic Cajun food.

ETA. Let’s start with Miami. If I had to eat in one city for a month I’d take Miami over NOLA any day of the week.

There’s plenty of good food outside of Louisiana. Don’t get me wrong, the foods Louisiana is known for, etouffee, gumbo, stews, crawfish, most seafoods, and even red beans are best in Louisiana. No one else can touch it.
But BBQ here is subpar and found much better elsewhere. Same for pizza, tacos, wings, etc. Other states in the south can cook Soul Food just as good too.

The biggest difference I see is not at the restaurants but at peoples homes.

Go read the United States of Arugula. Since about 1960 there has been an explosion in interest in cooking, eating, drinking, and all other manners of the culinary arts. People are much better cooks than they were a generation ago and have more food knowledge. Restaurants across America are interesting and varied. We eat much better than ever before and have more access to cuisines and ingredients.
Do some places still have a lot of bad restaurants? Sure. But overall the rest of America has caught up to Louisiana (assuming they were ever really behind).
