Corned Beef Brisket - Smoked

I picked up one of these from the store.
I want to smoke it this weekend.
Has anyone done this?
If smoked is it now pastrami?
Should I rinse it in water for a few minutes so it's not too salty? I have read some threads online that people soak in water for 24 hours and change the water halfway. I hoped to season the outside with a traditional pastrami rub.

Just trying to not have a disaster and not have it inedible.

I did this before. I think it's technically pastrami but I'm pretty sure they steam pastrami after it's smoked.

Mine came out pretty good if not a little salty.

This is a good write up with several cook options. I've done option 1 and 2. I want to try option 4.

You need to soak in water overnight to get the salt out.
Google how to smoke pastrami using corned beef, it has a rub recipe to use.
I did one Sunday and it came out great

I agree. They pull them out of the steamer all stacked on top of one another before they slice.

essentially pastrami but you probably need to rub it down with S&p and Coriander

Soak it in water for a bit or rinse it really well. Then season with a pastrami rub like THIS one and smoke until it hits 180-190. You don’t want it falling apart.

ETA I actually put mine in the sous vide at 137 overnight after rubbing it down then smoked to 165. It was excellent.

The guy who runs a Weber board has a recipe that several posters have used with success. Quick Pastrami – Smoked Corned Beef Brisket

Summary:

Soak the corned beef overnight to reduce saltiness.
Apply the pastrami rub.
Smoke at 250-275°F to 165°F internal temperature.
Wrap in foil and continue cooking to 195°F internal temperature.
Let rest in foil in an empty cooler for two hours.
Slice across the grain.

Here’s a thread I did on one a few months ago. I did mine from raw brisket but the smoking method should be the same. Had some good tips in it

Just a few house and no water change will do from my experiance

I do this quit often...picked up two at Sam's yesterday just for this. The method above is how I do it and it comes out pretty damn good.

Different brands have different salt levels, I usually soak the Costco one for a few hours, but I don't want to remove too much salt. Then I use the Katz rub:

Ingredients:

2 tablespoons whole black peppercorns

2 tablespoons fresh coarsely ground black pepper

1 tablespoon whole coriander seeds

1 tablespoon coriander powder

1 tablespoon brown sugar

1 tablespoon paprika

2 teaspoons garlic powder

2 teaspoons onion powder

1/2 teaspoon whole mustard seeds

1/2 teaspoon mustard powder

I put in in the fridge for a day on a rack, uncovered, to develop a perricle.


Then I cold smoke in pecan pellets for 8 hours, its smoked, but still basically raw.

My last one I put in the oven at 250, covered tightly with foil, for about 5 hours, it was melt in your mouth tender.

Thanks for all of the input, everyone. I am going to soak for sure. Will do a rub. Plan on smoking and might attempt to steam it like Katz for an hour or 2.

I tried it but did not soak or wash enough o the salt off. It was just OK.

I'v smoked them and then pressure cooked them for a half hour or so. I think they are great!

I've done this one several times.

Close to Katz Pastrami

Katz pastrami is sooo good its almost worth a trip to NY just for a pastrami and rye. This one will do in a pinch.

Bump. Corned brisket rinsing now. Katz rub is made. Will smoke on egg at 250 with charcoal and pecan. Will likely wrap and finish in oven. Any tips on which finishing method is best?
