Cooking ideas living with a vegetarian

Recently moved in with my girlfriend who is a vegetarian and having trouble coming up with some ideas for easy meals. We're both pretty novice cooks. When dating, we generally did our own thing or ate out, but now that it's an every night thing it's getting unhealthy and expensive.

I'm not starting my new job for another couple of weeks so I'd like to have some meals ready when she gets home until I get busy again. I know nothing about cooking vegetarian and ideally would want something where I could just add meat to my portion.

Kimchi Fries Rice w/ roasted brussels sprouts

cook 2 cups jasmine or basmati rice and set aside.

saute 1 onion w/ tsp garlic for 2 minutes
Drain liquid from kimchi container/package and save
add 32 oz kimchi and saute for 5 minutes.
Add rice and mix in and cook for about 5 minutes
Add the kimchi liquid and stir in thoroughly and cut heat off.

Brussels

Sauce: 2 tbl each of olive oil, fish sauce and thia chili. 1/2 tsp garlic and a couple drops of hot sauce such as sriracha.

cut in half and add 1 tsp olive oil and mix to coat Brussels.
put in oven at 400 for 15 minutes
add 1/2 sauce and stir to coat thoroughly.
Return to oven for 10-15 minutes until tender.
Add the remainder of sauce and mix and return to oven for 5 minutes.

herbs:
fresh basil, mint and cilatro to add at serving.

Also I thinly slice some raw onion and jalapeno to add at serving.

I also bake a few shrimp in soy sauce to add to mine.

Steak, baked potato, grilled asparagus, salad.

She can eat 3 of the 4.

Veggie lasagna
veggie enchiladas
veggie burritos
veggie tacos (black beans,tomatoes,avocado)...also do a lentil taco where I add taco seasoning to the lentils like you do w/ ground meat.
red beans & rice (I use Tofurky brand andouille sausage...its pretty good)
falafel pita-you can buy Casbah brand falafel mix that is good....just mix w/ water). I make my falafel from fresh mung beans and chikpeas in the food processor now and its simple too.

Break up with her. If that isn't an option, cook a lot of animal products. She will then break up with you.

You can go full fatty and make a veggie lasagna, or go for something like a quiche or veggie enchiladas. Homemade pizza can be quite easy to do as well, especially if you two are comfortable enough to do half-and-half with the toppings.

How about a veggie Pad Thai or a Thai curry?

Don't overlook the simplicity of a dinner salad. Yours just happens to have steak, chicken, fish, or whatever protein you choose.

You can pick up a rotisserie chicken at the grocery store and have chicken with your meal.

Spinach and Penne Pasta

Ingredients

• 18 oz's penne pasta, cooked
• 2 cloves garlic, minced
• 1 large onion, finely diced
• 8-10 cups fresh spinach, washed and dried
• 1 tablespoon olive oil
• 1 tablespoon salted butter
• 2 cups half and half 5% cream
• 1 cup grated parmesan cheese, plus more for garnish
• 1/4 teaspoon salt
• 1/4 teaspoon ground black pepper

Instructions


1.Start by heating the olive oil and butter in a large skillet over medium heat.


2.Add the onions, salt, and pepper, and sauté until lightly browned and then add the minced garlic and sauté for 2 minutes.


3.Next, add the spinach, 2 or 3 cups at a time, and completely wilt it.


4.Pour in the half and half, add the parmesan cheese, and lower the heat. Continue to cook the sauce until the cream has thickened slightly.


5.Finally, add the cooked, drained pasta to the sauté pan and toss to coat.


6.Serve immediately and garnish with more parmesan cheese.

Cook for yourself and allow the vegetarian to eat what she can. I cook vegetables all the time. But I don’t cater to a special diet.

I hate the way vegetarians always have to announce to waiters and whomever else is around that they are vegetarians.

For the love of God, just order something without meat and quit acting like it's some noble thing that you don't eat meat!

Sub out the meat portion for something like portobello mushroom. If you Grill steak or chicken, make her a mushroom. This is what I usually do with my wife, who doesn’t eat beef or pork

My daughter went through a vegetarian stage. While we didn't encourage it, I did make one dinner a week vegetarian until she saw the light. Here were two of our favorites.

As long as she doesn't care that you eat meat, it's fine. I was with a vegetarian for 7 years. Finding restaurants is harder than figuring out shite to cook at home.

Made the spinach chickpea dish tonight after reading this thread. Flavorful and filling. I like eating vegetarian every now and then. No more than once a week.

We eat meatless 2-3 nights a week, but we also eat eggs and cheese. If she’s ovo-lacto, then quiche is a wonderful thing. It’s flexible, you can add anything from spinach and caramelized onions to gruyere and chopped asparagus...use a storebought crust.

Go to public library and borrow a copy of Mark Bittman’s How to Cook Everything Vegetarian. It’s a good basic cookbook, you’ll learn plenty if you cook out of it a few nights a week.

I'd cook regular meals and she can eat everything but the meat. I wouldn't change the way I eat.
