Thanks for the advice everyone. She's not pushy so I'm not running away

Tonight I made a pineapple thai fried rice dish I found online and it was pretty good for no meat. I did get my Chipotle burrito bowl with double steak for lunch.

A similar source is The America's Test Kitchen Complete Vegetarian Cookbook.

Bittman is great when you are learning to cook. He keeps it simple. He will also give you a basic recipe and then a few twists on it to change it up.

I just watched an episode of America's Test Kitchen where they made Meatless “Meat” Sauce with Chickpeas and Mushrooms. Looked really good.

I'm gonna make it with zucchini spirals instead of pasta. Salt the spirals and let drain a bit in a colander, then mix in the sauce and let them cook a while. Cuts carbs, and many will think they are eating pasta. They really work well.

I like having a vegetarian meal occasionally.. This is a really good book that will give you some salad ideas that you can add meat or fish to for yourself. Salad Days

My wife and one of sons are vegetarian. My other son would eat nothing but meat.

Sweet potatoes are your friends. Tacos, bowls, stir fries, burritos, etc... cube sweet potatoes, toss in olive oil, cumin/chilipowder/whatever, spread on baking pan and roast in the over at like 450 for 20-30 minutes. They're amazing for all sorts of dishes and can be used in lieu of your other protein in a dish.

I'll also second the Bittman book. It was my bible when I first really started learning to cook. Does a great job of teaching and explaining technique and theory. If you cook with it, you'll learn enough to start throwing together meals without any recipes and whatever ingredients you have around.

Y’all are being too easy on him. The only choice is to kill the GF before she goes full vegan. We can’t have those genes reproducing.

Many to most of the ones I’ve been around are pretty insufferable about it. I’ve seen some servers treated like poo poo by militant Vegans bc their meal came from the same kitchen as animal flesh.
